Frequently Asked Questions

What is a kitchen exhaust system?

It consists of 5 parts:

  1. Filters : collect up to 80 % of grease when the fans and exhaust systems are working properly. Filters should be kept clean regularly.
  2. Hood : situated directly above all cooking equipment and designed to cover and to minimize smoke from spreading to other areas.
  3. Planum : actually a part of the duct work but horizontally constructed to accommodate filters to fit in and collect grease from the duct.
  4. Duct : metal tunnel that directs grease outside of building.
  5. Fan : situated mostly on the roof of the building and the main power that forces the air stream in order to move greasy, smoky air out of kitchen.

Why do you need to keep your exhaust system in good shape?

A dirty kitchen does not mean only fruit flies and food debris on the counter. It may be hidden from view and has serious and dangerous consequences.

In the USA , two restaurants are burnt down by fire every day. Fire department reports reveal the majority of these fires start in kitchens that have clogged exhaust systems. Clogged exhaust systems mean accumulated grease (solid form) builds up throughout the hood and duct system. Just like a persons vein might build up with cholesterol, causing serious illness to the body.

In a kitchen that has an exhaust problem, the fumes from food cooking in the kitchen can creap out into the customer sitting area, spoiling the restaurant air.

Food industry survey's show that a dirty exhaust system in a kitchen is not only a fire hazard, but also a health hazard to the workers in the kitchen (imagine 8 hours hard work with poor ventilation due to grease build up).

Maintaining a healthy, clean kitchen is economical in the long run. You can avoid the potential of having to close down for an indefinite term and the hefty cost of new exhaust system.

Why does the kitchen floor looks messy after hood cleaning is done?

Many hood cleaners think their job is just cleaning the exhaust system so they do not pay attention surrounding areas getting dirty. Advance Hood's method is developed to prevent these left over messy situations.

We clean our filters by ourself every night. Doesn't that help prolong the time between cleanings?

Absolutely, most filter systems intercept up to 80% of grease contamination from the exhaust system, if the exhaust fan is working properly.

How often do I need to clean my exhaust system?

This depends on the volume of cooking that produces greasy smoke.

For Example:

  1. Heavy volume steakhouse -monthly
  2. Franchise fast food -bimonthly
  3. Hospitals, other institions - semi annually
  4. Other restaurants -quarterly
  5. Kitchens that consume solid fuels -monthly

*these are only recommended cleaning schedules.
